Is there any way to change the difficulty to super easy in the middle of a game? I don't see the option in preferences.

Ah no, because Super Easy in practice is the Easy difficulty, but your characters all starts with +100HP. So in practice the only difference vs the Easy mode, is that you "only" get that initial bonus (which is a big bonus I think).
